Instructions
1- Preheat and Prepare Ingredients:
- Preheat your oven to 400Β°F (200Β°C).
- Cut each of the Roma tomatoes into quarters.
2- Prepare Garlic and Setup Pan:
- Trim the top off the head of garlic to expose the cloves.
- Arrange the tomatoes and garlic in an aluminum pan. Drizzle generously with olive oil, then sprinkle with Italian seasoning and pepper.
3- Add Onion and Roast:
- Add half rings of white onion atop the mixture.
- Roast in the preheated oven for approximately 25-30 minutes, or until the tomatoes are soft and slightly charred, and the garlic is golden brown.
4- Blend and Strain Soup:
- Once roasted, transfer the tomatoes, onion, and garlic into a blender. Blend until the mixture is completely smooth.
- Strain the blended soup into a pot to ensure a velvety texture.
5- Finish Soup:
- Reheat the soup gently, stirring in heavy cream just before serving.
6- Prepare Grilled Cheese:
- Heat a skillet over medium heat.
- Butter one side of each bread slice.
7- Assemble and Cook Sandwich:
- Place two slices, buttered side down, onto the skillet. Top each with two slices of cheddar cheese, then cover with the remaining bread, buttered side up.
