Ingredients

🍅 8 Roma Tomatoes
🧄 1 head of Garlic

🧅 1/2 White Onion
🥛 1/4 cup Heavy Cream

Instructions

1- Preheat and Prepare Ingredients:

• Cut each of the Roma tomatoes into quarters.

2- Prepare Garlic and Setup Pan:

• Trim the top off the head of garlic to expose the cloves.
• Arrange the tomatoes and garlic in an aluminum pan. Drizzle generously with olive oil, then sprinkle with Italian seasoning and pepper.

3- Add Onion and Roast:

• Add half rings of white onion atop the mixture.
• Roast in the preheated oven for approximately 25-30 minutes, or until the tomatoes are soft and slightly charred, and the garlic is golden brown.

4- Blend and Strain Soup:

• Once roasted, transfer the tomatoes, onion, and garlic into a blender. Blend until the mixture is completely smooth.
• Strain the blended soup into a pot to ensure a velvety texture.

5- Finish Soup:

• Reheat the soup gently, stirring in heavy cream just before serving.

6- Prepare Grilled Cheese:

• Heat a skillet over medium heat.
• Butter one side of each bread slice.

7- Assemble and Cook Sandwich:

• Place two slices, buttered side down, onto the skillet. Top each with two slices of cheddar cheese, then cover with the remaining bread, buttered side up.
