Greetings dear friends of Foodies Bee Hive, welcome to my blog. On the occasion of the Easter week I wanted to treat myself and get out of the routine, besides giving free rein to the marine gastronomy, this time the recipe is about stuffed squid. This Easter was the squid season, there were everywhere, so after leaving work I went to the nearest fishmonger, they were almost closed, but I could take half a kilo of squid that were fresh and large.

I haven't eaten calamari for a long time and that made it a much more appetizing craving. The recipe is not complicated and the result is worth it. I decided to use bacon, squid tentacles, some shrimp and cheddar cheese for the filling. It is important to note that the filling was enough for the calamari, a dish for 1 person, I was alone at home so it was perfect, if there are more people, just double the ingredients for each diner. Keep in mind that the calamari should not be stuffed to the top because with cooking they shrink and swell, an over stuffing will make them burst and the stuffing will overflow.

## Ingredients

- 258 grs of squid (3 squid)

- 37 grams of shrimp in shells (4 shrimp)

- 18 grs of bacon

- 19 grs cheddar cheese slice (1 slice)

- salt to taste

- 2 tablespoons of oil for frying

- 3 thin wooden sticks

## Preparation

1.-. The first thing to do is to clean the shrimp and squid. We remove the shell, the head and the vein from the shrimp. We cut the tentacles off the squid and leave the body clean. After washing them quickly, we cut them into very small pieces and also the bacon (this will be our stuffing).

2.-. Season the squid and shrimp pieces with salt to taste and also the three squid bodies.

3.-. In a frying pan over medium low heat, add 1 tablespoon of oil and fry the bacon. When 1 minute has elapsed, add the small pieces of squid and shrimp, let them brown, just let them fry for a couple of minutes. Then remove them from the heat and place them on absorbent paper.

4.- Add the diced cheddar cheese to the fried squid, shrimp and bacon.

5.- Proceed to stuff the squid only halfway (so that the squid is not bulging from the stuffing) and close them with a wooden toothpick.

6.- In the same frying pan that we have already used, add 1 more tablespoon of oil and over medium low heat, fry the squid for 2 minutes on each side.

Saludos queridos amigos de Foodies Bee Hive, bienvenidos a mi blog. Con motivo de la semana mayor quise darme un gustito y de salir de la rutina, además de darle rienda suelta a la gastronomía marina, en esta ocasión la receta se trata de calamares rellenos. Esta semana santa fue la época del calamar, había por todos lados, así que después de salir del trabajo me fui a la pescadería más cercana, casi cierran, pero me pude llevar medio kilo de calamar que estaban frescos y grandes.

Tiempo sin comer calamares y eso lo convirtió en un antojo mucho más apetitoso. La receta no es complicada y el resultado vale la pena. Decidí usar para el relleno tocineta, los tentáculos del calamar, algunas gambas y queso cheddar. Es importante señalar que el relleno fue suficiente para los calamares, un plato para 1 persona, yo estaba sola en casa así que fue perfecto, de ser más personas, solo hay que duplicar los ingredientes por cada comensal. Hay que tener en cuenta que los calamares no se rellenan hasta el tope porque con la cocción se encogen y se inflan, un sobre relleno los hará reventar y se desbordará el relleno.

## Ingredientes

- 258 grs de calamares (3 calamares)

- 37 grs de gambas con concha (4 gambas)

- 18 grs de tocineta

- 19 grs laja de queso cheddar (1 laja)

- sal al gusto

- 2 cucharadas de aceite para freír

- 3 palillos finos de madera

## Preparación

1.-. Lo primero que haremos es limpiar las gambas y los calamares. Le retiramos la concha, la cabeza y la vena a las gambas. Les cortamos los tentáculos a los calamares y dejamos limpio el cuerpo. Después de lavarlos rápidamente, los cortamos en trozos muy pequeños y también la tocineta (este será nuestro relleno).

2.-. Condimentamos los trocitos de calamar y camarones con sal al gusto y también los tres cuerpos de los calamares.

3.-. En una sartén a fuego medio bajo, agregamos 1 cucharada de aceite y ponemos a sofreír la tocineta. Cuando haya transcurrido 1 minuto, añadimos los trocitos de calamares y camarones, dejamos que se doren, apenas los dejaremos freír por un par de minutos. Luego los retiramos del fuego y los colocamos sobre papel absorbente.

4.- Añadimos el queso cheddar en trocitos a los calamares, camarones y la tocineta que hemos freído.

5.- Procedemos a rellenar los calamares solo hasta la mitad (que no quedé abultado el calamar por el relleno) y los cerramos con un palillo de madera.

6.- En la misma sartén que ya hemos usado, añadimos 1 cucharada más de aceite y a fuego medio bajo ponemos a sofreír los calamares, 2 minutos por cada lado.
